The Jerusalem artichoke is a winter vegetable which grows like a weed and has one of the most subtle flavours I know: I find people either love it or loathe it. These lovely vegetables are rather knobbly and so a fiddle to peel, but worth every minute of the time it takes. They make a most delicious simple soup, which also freezes well. It is good accompanied by any of the breads in this book, but especially the Granary Bread.
