I have only fairly recently realized just how good are leeks with any smoked fish. This soup is a meal in itself. I like to liquidize half the potato and leeks in their fishy milk and water, and then leave the rest of the soup in chunks of potato and sliced leeks, with the cooked fish flaked through. This gives a fairly thick base to the soup, yet provides a contrasting texture with the bits of fish, potato and leek at the same time. The chopped parsley must be added at the last moment, to
