This simple recipe combines the best of summer flavours – peas, apples and mint. For any recipe which uses mint, I do prefer to use applemint, the rather hairy, broad-leaved type which I think has a far superior flavour to the more common spearmint. This is a good way of using up garden peas which are still good, but on the large side to serve as a vegetable.
