In the autumn and winter, when pheasants are plentiful and can be bought so easily these days even by those who don’t live in the country, it is good to make the most of them. Pheasants are only mildly gamey in their taste, and their flavour combines very well with mushrooms. This soup has a small amount of Madeira which further enhances the taste. The rice adds substance.
