This is a traditional Scottish soup, called Cullen Skink. It is exquisitely flavoured, simple to make and greatly enjoyed by all who like fish. I don’t call it by its traditional name because this is my version: the diced tomatoes and parsley are my additions, and also the onions. This soup looks most attractive as well as tasting delicious.
