This is one of the soups I like best, combining as it does three of my favourite flavours – spinach, tomato, and garlic. It is extremely low in calories and makes a wonderful first course for a dinner party or main course soup for lunch. It is very easy and quick to make. I use frozen chopped spinach so I don’t bother to liquidize the soup, and the spinach and the pieces of tomato which are stirred through it give it a nice texture. I don’t think it needs a garnish – the chopped tomato does
