Too many recipes go in fashions of usefulness. Marinated kipper fillets are such a dish, and yet what a waste of a good recipe! It is one of the most convenient and delicious first courses, and not at all difficult or time-consuming to make. I like to use the distinctive flavour of limes in the marinade – we can even buy limes in the Co-op in Broadford, Skye, so I would think they are obtainable in all parts of rural Britain, too!
