The toasted walnuts provide a good texture in this pâté, and their flavour goes very well with the rich smoked mackerel. The pâté is improved by a lot of lemon. Although I’m suggesting it here as a first course, which is where you usually find pâtés, I also like to serve it with granary bread or toast and a salad as a main course for lunch, in larger quantities than if it were a first course.
