Avocados with Spinach and Garlic Mayonnaise

Ingredients

  • 8 oz/225 g fresh baby spinach, well drained
  • 1 tbsp lemon juice

Method

This recipe is best made in a food processor. Put the spinach into the processor, together with the lemon juice, Tabasco and garlic. Whiz until you have a smooth spinach purée. Add the mayonnaise, and whiz again. Put this mixture into a bowl, cover with clingfilm, and put it in the refrigerator until you are ready to use it.

A couple of hours before serving, cut the avocados in half, ca
