This is so good – the other parts of this salad are tiny cubes of bread, shallow-fried in butter and oil (the oil prevents the butter from burning), and small bits of crisply cooked bacon, preferably smoked bacon. If you make a French dressing with grainy mustard, stirring it in well, it seems to enhance the flavours of this first course salad.
