Salads with strong individual characters, as it were, as their components, make my favourite first courses. They are convenient in that they can be prepared well in advance, only needing to be assembled before supper-time. In this salad the tastes of the quails’ eggs, the artichoke hearts (well drained of their brine) and the smoked salmon all complement each other.
