You can combine any fish you like, really, in this dish. The more special the occasion it is intended for, the higher the ratio can be of shellfish to white and smoked fish. It makes a delicious main course for summer parties, one of my favourites of the recipes in this book! Also one of the simplest.

Ingredients

  • 2 lb/900 g smoked haddock or cod

Method

Feel the fish with your fingertips and remove all bones. Put into a saucepan with milk and water to cover, and the onion and celery.

Heat till the milk and water just begins to simmer. Cook for 2 minutes, then take the pan off the heat and leave till the fish is cool enough to handle. Flake the fish, carefully removing the skin. Reserve the flaked fish.
