This is a perfect dish for a hot summer’s evening. It has to be prepared several hours in advance, so you can get it ready in the morning. I like to serve it with either warm granary bread or Black Olive, Sun-Dried Tomato and Garlic Bread. It needs only mixed green salad leaves as an accompaniment apart from the bread.
