Herring roes are not readily found, but when they are, seize the chance and buy as much as you can eat for several days! They are best eaten with bacon, especially I think smoked bacon – the flavour of both smoked and unsmoked bacon goes so very well with all things fishy, and this is no exception. The Sesame Toast adds a good crisp and crunchy texture to the whole. The toast can be made ahead, and warmed up, if it’s more convenient for you.
