For the crêpes

  • 2 large eggs
  • 4 oz/112 g plain flour

Method

To make crêpes, the batter for which can be mixed a day in advance and kept in the fridge, put the eggs into a food processor and whiz, gradually adding the flour, milk and water, and melted butter. Whiz in the herbs and add the salt and pepper. Leave this batter to stand for at least 30 minutes before making it up into crêpes.
