This is a most convenient main course as well as being quite delicious. But it is a filling dish, and I prefer to serve two vegetables, such as steamed sugar snap peas and, perhaps, lemon-glazed carrots; potatoes are, I think, surplus to requirements. But that is a decision only you can make.

  • 4 salmon fillets, skinned and bones removed, each weighing 4–6 oz/120–150 g

Method

Make the dill butter by beating the 4 oz/112 g butter until soft and creamy. Add the chopped dill, lemon juice and pepper. It should be spreadable.
