I love the way people are eating so much more fish these days. Along with our growing appreciation of fish has come a desire to experiment with the different types of fish we cook. It is several years since we first cooked sea bass, a firm-fleshed fish which is versatile because of its robustness. In this recipe it is baked on a bed of parsley, then served with a creamy mushroom and almond sauce. It’s quick to cook, but makes a delicious and elegant main course for a special lunch or dinner
