This is a convenient dish in that the stuffing can be made a day in advance, and the chicken breasts flattened and spread with the spinach and Parmesan mixture and left in its dish in a cool place (fridge or larder) until the evening, when all you need do is pop it in the oven. The sauce, too, can be made in advance and reheated to serve with the chicken. They are a most delicious combination.
