Ingredients: 1 onion, skinned and quartered; A 4-lb/1.8-kg chicken; A 7-oz/200-g tin evaporated milk; 1 rounded tbsp curry powder; 2 oz/56 g plain flour; 2 tbsp lemon juice; 4 tbsp mayonnaise; Salt and freshly ground black pepper; 2 oz/56 g Cheddar cheese, grated; 4 rounded tbsp breadcrumbs, or 2 small packets potato crisps, crushed; 2 oz/56 g butter; 2 lb/900 g frozen broccoli; 1 carrot, peeled and cut in chunks; Bouquet garni; Salt; A few black peppercorns

The sauce for this dish has some rather unlikely sounding ingredients in it. Don’t be put off, because it is a most useful recipe. It can be made several hours ahead and reheated when needed. It also has the vegetable in with the chicken and the sauce, making extras unnecessary. Although the ingredients sound odd, their combination is quite delicious, giving a lovely velvety textured, tasty sauce.
