Game chips, either wafer-thin slices or matchsticks, can be made in the morning and reheated to serve with the pheasants for dinner.
To make good game chips you really need a mandoline, because you can’t slice the potatoes thinly enough by hand – I know, I’ve tried! The slices have to be thin to stay crisp – if they are too thick, they will go flabby soon after frying. We make matchsticks here for our guests.
