Leeks and potatoes cooked together complement each other extremely well (think of vichysoisse) and the sweetness of the leeks enhances the flavour of the lamb in this all-in-one dish. The very small amount of medium curry powder won’t be noticed by any partaker who thinks they don’t like curry, I promise you, but it does just round off the overall flavour well.
