This may sound rather odd to you, I realize, but it is a most delicious way to roast lamb. It is equally good hot and cold – my sister Camilla and I both love roasting a leg (or two, depending on numbers) to serve cold for a special occasion. I cook it the same day that it is to be eaten, and there is such a variety of vegetables and salads which embellish a cold roast leg of lamb.
