This is one of those lovely supper or lunch dishes that can be prepared ahead and heated through in the oven at the last minute. As with all egg dishes, it is very filling. Lancashire cheese is one of the best cheeses for cooking with. The quantities given here are for a main course. If you are making this for a first course, eight eggs would be enough.
