For this delicious dish, the cooked smoked fish is flaked and stirred into the eggs as they scramble – that way the fish warms up as the eggs cook. The fish can be cooked and flaked in the morning for supper that evening, and the eggs can be beaten with the pepper, Tabasco sauce and milk, all ready to scramble 5 minutes before you eat. The pinch of powdered ginger sprinkled on each tomato before grilling adds an interest which enhances the smoked haddock and scrambled eggs.
