These are delicious and different served with soup, as a first course, especially a soup such as the Leek, Mushroom and Madeira Soup.
Start by making the filling. Heat the butter and oil in a saucepan, and add the sliced leeks and chopped garlic. Cook till the leeks are soft, about 10 minutes over a moderate heat. Season with salt and pepper, and freshly grated nutmeg. Take the pan off the heat and liquidize the cooked leeks to a smooth purée, adding the cream cheese.
