This spinach strudel is made with filo pastry, which is widely available readymade from delicatessens. If you have to buy more than you need, just wrap up any unused leaves of filo pastry and freeze them.

The spinach filling for the strudel is quite spicy, and I like to serve it with a tomato sauce. The sauce is purely optional, however, an embellishment rather than an integral part of the dish!
