Cabbage is one of those things which conjures up in people’s minds awful visions of greatly overcooked mush in a pool of water, with that all-pervading smell which seemed to fill the sort of institution which turned out cabbage like this. Poor cabbage, because it is a delicious winter vegetable, and can be cooked in a number of ways. I think it is very complementary to stewy dishes. This is one of my favourite ways of cooking and eating cabbage.
