Spicy Red Cabbage with Apples, Onions and Raisins

This is such a convenient vegetable dish to prepare, because it can all be made in the morning and reheated for dinner that night. The flavours of red cabbage, apples and onions all go very well with venison, and with all game.

Ingredients

  • 3 tbsp oil
  • 1 oz/28 g butter

Method

Heat the oil in a large saucepan or heavy casserole and melt the butter in it. Add the onions and cook for 2–3 minutes, then add the cabbage, apples, raisins, vinegar, allspice and seasoning. Cook over a gentle heat for about 30 minutes, stirring from time to time so that it cooks evenly.
