Celeriac is one of the seasonal vegetable treats. I love it raw, as in the Celeriac and Egg Mousse, I love it combined with other root vegetables, and I love this smooth purée.
Peel the celeriac and cut them into chunks. Peel the potatoes and cut them into chunks too. Put the cut-up celeriac and potatoes into a saucepan and cover with water. Add the salt and boil the vegetables together till they are tender when you stick a knife into them. Drain, and steam them off over heat to get rid of any excess moisture.
