We grow courgettes, and after the first season, they tend to grow in such abundance that I rack my brains for ideas for cooking them. This is a recipe of my mother’s. It is easy, good, and can be used either as a first course, or as an accompaniment; it is especially good with plain grilled chicken or fish.
