This really does resemble vegetable spaghetti. A mandoline takes all the effort out of the slicing and takes seconds to render the courgettes into spaghetti-thin strips.

Ingredients

  • lb/675 g small courgettes, washed, dried and trimmed
  • Olive oil for sautéing
  • Salt and fre

Method

These courgettes can be sliced into very thin spaghetti strips with a mandoline or vegetable peeler on the morning of a dinner party, and they take literally only a minute to cook in a few spoonfuls of hot olive oil, seasoned with salt and freshly ground black pepper. If you wish, and you know that all your guests are garlic lovers, add some very finely chopped garlic to the oil, too.
