Grated Beetroot and Carrot Salad

It is rare to come across grated raw beetroot, but it is so delicious and combines very well with grated carrots in a salad which makes for very good winter suppers. The only thing against grating beetroot is that, whilst peeling and grating, the beetroot inevitably dyes your fingers a handsome shade of burgundy, but as this washes off quite easily it seems a small deterrent. Dressed with a spoonful of French dressing, and served with baked jacket potatoes and
