Mushroom risotto is my great stand-by when I am racking my brain about what to have for supper. I always keep a large supply of Arborio rice (the rice with which risotto is made and which has the ability to absorb quantities of liquid and yet retain the individual grain shape) in my store cupboard. If you have good chicken (or vegetable) stock to hand, with just a handful of vegetables you can make a delicious supper, needing only a salad as accompaniment. Mushrooms, I think, make the best
