This risotto, like the two previous recipes, is eminently suitable for those who don’t eat meat or fish, providing that a good vegetable stock is substituted for the chicken stock of my choice. Any homemade stock is preferable to stock cubes and water, but if you do have to resort to cubes, those with no additives such as Kallo or Friggs are far superior to those which are heavily laced with monosodium glutamate, which gives a syrupy sameness to all the various flavoured cubes.
