Rice Salad

Rice salad can be pallid stodge. This is the nicest rice salad I have ever come across: the almonds, raisins and rice are all contrasting textures, and the dressing makes all the difference not only to the taste but also to the texture of the rice.

It is particularly delicious with all mayonnaise or otherwise sauced cold chicken, meat or fish dishes, including the Smoked Chicken and Mango Salad with Curried Mayonnaise.
