This is a perfect dish for a summer lunch. Fillets of smoked mackerel coated with crushed black peppercorns can be bought in most fish shops and good food departments. When flaked into a mixture of rice, chopped hardboiled eggs and plenty of chopped chives and parsley, and all mixed into a slightly mustardy yoghurt sauce which counteracts the richness of the mackerel, the result is superb.
