Kebabs are very versatile. You can make all sorts of delicious meat and vegetable combinations, stick them on a skewer and barbecue them. You can buy beautiful kebab skewers or use ordinary kitchen skewers – the proper kebab skewers are easier to handle than kitchen skewers as they have larger ends to hold on to, and their blades are broader and flatter, which holds the food in place better. Lambs’ kidneys make delicious kebabs.
