This is a perfect pudding for a picnic when combined with lemon curd and whipped cream and strawberries.

Ingredients

  • 4 oz/112 g granulated sugar

Method

Mix together the two sugars. Line a baking tray with a piece of baking parchment. Whisk the egg whites till stiff then, whisking continuously, add the sugar a spoonful at a time. When the sugar is all incorporated, use a fluted nozzle to pipe the meringue on to the prepared baking tray in even-sized rounds – I aim for about 2–2½
