Vegetable stock is wonderfully tasty and can be substituted for any other stock. All vegetables are perfectly delicious in vegetable stock except potatoes and turnips. Somehow turnips make the stock taste bitter, and potatoes make it taste sour and go cloudy. The following recipe is only a guide – you can put in whatever you have to hand in the vegetable line.
