Cut each avocado in half and flick out the stone. Scoop the flesh into a bowl or food processor and add the mustard powder, sugar, salt and pepper. Beat or blend until smooth. Then add the oil in a very slow trickle, continuing to beat or blend. Lastly add the lemon juice. Taste, and if it isn’t sharp enough for you, add more lemon juice.
