This ‘dresses up’ so much plain grilled or barbecued food, whether chicken, meat or fish.

Ingredients

  • 1 whole egg + 1 egg yolk
  • tsp mustard powder

Method

Put the whole egg, egg yolk, mustard, salt, sugar and pepper into a blender or food processor and blend until smooth. With the motor running, add the oil drop by drop to start with. As the mixture begins to thicken, add the oil in a steady trickle until it is all incorporated. Blend in the vinegar. Add the parsley and the lime rind and juice. Transfer to a serving bowl.
