A delicious summery mayonnaise with a crunchy texture.
Put the whole egg and the yolk into a liquidizer or food processor, and add the mustard powder, salt, sugar and pepper. Blend until smooth. Continue blending and add the oil, drop by drop at first. When the mayonnaise is thick and smooth add the rest of the oil in a slow trickle, still blending. Lastly add the wine vinegar. If the mayonnaise is too thick, add 2 tablespoons of very hot water.
