Apple and Thyme Sauce

This sauce is delicious served with roast pork, or with grilled pork chops.

Ingredients

  • 2 oz/56 g butter
  • 1 onion, skinned and very finely chopped

Method

Melt the butter and cook the onion over a moderate heat for several minutes till it is really soft. Then add the chopped apples and cook until they fall into mush, which cooking apples do. Add the thyme and sugar or honey. Taste, and season with salt and pepper if you like. Strange as it may sound, the sautéed onion adds a certain amount of sweetness to this otherwise tart sauce.
