This sauce is tangy and delicious, so good with both chicken and grilled fish.
Put all the ingredients except the lemon juice and parsley into a liquidizer or food processor, and blend until smooth. Pour into a heatproof bowl.
Stand the bowl in a large saucepan with water coming halfway up the sides of the bowl. Cook, with the water just about simmering, stirring from time to time with a wire whisk, for about 20–25 minutes.
