This sauce is one of the most valuable of all sauces to have in your repertoire. It is so versatile – delicious with vegetables or fish, or in pizzas – and has the added bonus of being low in calories, too. If making the sauce in summer, when fresh basil is available, add the basil when you purée the sauce. I think that fresh basil loses its pungency in cooking.
