Mangoes are so easy to buy these days. I even found some perfectly ripe ones in the Co-op in Broadford, our local town here on Skye. They make a delicious sorbet, refreshing yet with more substance to it than lemon sorbet, for instance. Accompany the sorbet by chopped mangoes (it is pretty well impossible to slice a mango neatly without wasting at least half of the fruit) with lime juice squeezed over them which just sharpens up the taste of the whole.
