This is the recipe I like best. It tastes good, has an excellent texture, and doesn’t need beating at half frozen.

Ingredients

  • 4 large eggs, separated
  • 4 oz/112 g sieved icing sugar

Method

Whisk the egg whites till they are fairly stiff, then, whisking continuously, gradually add all but about 1 tablespoon of the sieved icing sugar, whisking till you have a stiff meringue. There is no need to wash the whisks, go straight on and whisk the yolks, adding the remainder of the icing sugar,
