Easy

This is so easy it’s unbelievable. My mother first introduced me to it about fifteen years ago, and it has become much in demand. It is good served on its own, but also makes a delicious accompaniment to stewed fruit or fresh fruit salad.
Whip the cream fairly stiffly and then stir in the yoghurt. Pour this into a bowl and cover the top with a layer of demerara sugar – as thick or as thin as you like. Leave for several hours or, better still, overnight.
