Lemon and raspberries seem made for each other, so well do their flavours complement each other. A really lemony lemon mousse is still the favourite way to end a dinner party for many people. This mousse can be made a day or two in advance and kept, covered, in the fridge – but do remember to take it out of the fridge when your guests sit down to dinner, then it will be at room temperature by the time it is ready to be served. Serve the raspberry sauce in a bowl to go with the mousse
