This is a convenient pudding in that the roulade has to be made in advance. You can substitute blackcurrants, blackberries, or sliced strawberries for the raspberries in the recipe. We sometimes spread it with lemon curd, or, in season, with lemon and elderflower curd. In the early months of the year I make it with Seville oranges, instead of lemons. It is really a versatile, useful, but above all delicious pud. It is perfect for a summer lunch or dinner party.
